Guy Grossi’s name is synonymous with fine dining, and the finer things in life.

Recognised as one of Australia’s leading authorities on Italian food, Guy is a passionate chef devoted to preserving cultures and traditions. For this reason, Guy was the perfect choice to curate the menu for the exclusive and decadent TIME • DINING experience.

As part of an extension to the highly popular exhibition, guests can now journey deeper into TIME • RONE and enjoy a drink at the TIME • BAR or experience the dining experience with a four-course meal in a private dining room, featuring a never-before-seen mural by Rone.

“I was very inspired and in awe of what RONE is trying to achieve - trying to unlock memories through timelessness. After I spoke to him (Tyrone) I was left thinking about luxury with a timeless edge and what defines it. Most importantly TIME • DINING is about centring the guest in the experience, rather than just the individual dish itself. It’s about creating memories within the art, the immersive feel and the beautiful food in front of them,” said Guy Grossi.

The TIME • DINING experience, is a unique dining experience (styled by Carly Spooner), encompassing music (composed by sound designer Nick Batterham), food (curated by Guy Grossi) and paired with world-famous beverages (St Hugo curated by VNTNR).

Guy Grossi was in Perth recently to launch the dinners and said working with Rone and AGWA has been “a career highlight”.

“I want guests to feel like they are in a Fellini film – I want it to feel cinematic. I want them to feel like they are on the set of The Cook, the Thief, His Wife & Her Lover! I hope they are transported into another world in the TIME • DINING room and then they can move on to the TIME • BAR to finish with another unique and memorable experience they take away with them long after they leave,” he said.

We asked Guy to swing past the Design Store to choose his favourite things. Among them a Kapla construction puzzle that Guy took home to Melbourne. He said, “My son-in-law is an engineer and he will have fun constructing this puzzle with my two and a half year old grand-daughter Luna”.
